5-6 medium tomatoes, seeded and chopped
1 medium-sized jalapeño, minced (add more or less to taste)
1/2 cup red onion, chopped
1/2 cup loosely packed fresh cilantro, coarsely chopped
1 teaspoon course salt
1 tablespoon fresh lime juice

Combine all ingredients in a bowl & mix well. Best when served immediately; may be made one hour ahead and kept at room temperature.
